Bacon Mango Cauliflower Rice


Prep Notes

For the cauliflower rice:

 Process 1/2 head cauliflower in food processor until consistency of rice.  DO NOT PRE-COOK!

If you pre-cook the rice, and then cook it again in the recipe below, it will turn to mush and essentially disintegrate.  Leave it uncooked and then cook it in the recipe below.  It will maintain an al dente consistency and leave the dish delicious!

Ingredients

  • 1 lb bacon, chopped
  • 1 yellow onion, diced
  • 2 bell peppers, diced
  • 2 mangos, diced
  • 3 cups cauliflower rice
  • 1 Tablespoon raw coconut aminos (or soy sauce if that's what you have on hand)
  • 1 egg
  • dash of black pepper

Directions

  1. Heat a large skillet over medium heat and add bacon pieces and onion.
  2. Cook until all the fat has rendered. 
  3. Pour off all but 1 Tablespoon bacon fat.
  4. Add in bell pepper and mango and cook for about 3-4 minutes until starting to get caramelized.
  5. Add in cauliflower rice and coconut aminos or soy sauce and then stir in egg until cooked through.
  6. Add pepper and serve!
