Homemade Copycat Rx Bars

These are for chocolate covered cherry flavored bars, but we've also made blueberry lemon bars with dried blueberries and lemon extract!


10 bars


  • 1 cup pitted dates
  • 3/4 cup egg white powder
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/4 cup cacao nibs
  • 1/2 cup dried cherries
  • 1/4 tsp salt
  • 1 tbsp water


  1. Chop almonds and cashews in food processor
  2. Add dates, nibs, salt, cherries, and powder and blend together in food processor
  3. Slowly add water until the mixture becomes doughy.  Add more water than called for in small amounts if necessary.
  4. Line an 8x8 pan with plastic wrap and press the doughy mixture into the pan until flat.
  5. Place in freezer for 4 hours.
  6. Remove and cut into 10 bars.
